Super premium dark chocolate that is indeed healthy for you! They are a woman owned company founded in 2010. Antidote sets a standard in Dark Chocolate Bars. Our original flavor pairings are made with real bits and pieces of fruits, exotic spices and fragrant herbs (no essential oils or artificial flavors). We are proud to offer dark and milk chocolate bars containing a higher cacao content and much less sugar than other brands.

An artist may express himself in many ways. For Ghyslain Maurais, it has been through chocolate and pastry. Born in Québec, Canada, Ghyslain found his culinary passion while working in the field to fund his architectural education. Soon after, he changed career paths and entered the Institue du Tourisme et d’Hotelerie du Québec.
Certified in French pastry, chocolate décor, candy making, blown/pulled sugar and bread making, Ghyslain has served as the head chef for the Quèbec Delegations in New York and London. His career includes experience as both a pastry and executive chef in first class restaurants and hotels.
While working at the Inn of Versailles in Ohio, Chef Ghyslain met his wife, Susan. Together they relocated to her hometown in Union City, Indiana to establish Ghyslain Chocolatier.

Inspired by the spice route: Our single origin cocoa beans have been chosen for the diverse flavours you can experience when tasting and rich heritage, located along the maritime Spice Route that traders sailed hundreds of years ago to gather valuable ingredients to sell on to European buyers. Bean to bar chocolate: Using granite wheels, the roasted beans are ground for several days in a process which slowly decreases the molecule size to create incredibly smooth chocolate with no need for additional additives.
Our single origin collection is crafted from beans originating from Cuba, Vietnam, Indonesia, Madagascar, Papua New Guinea and India.

Drawing inspiration from local ingredients, we transform transparently-sourced cacao from all over the world into craft chocolate bars, bon bons, confections, desserts, and beverages.
The chocolate we make is truly a collaboration between ourselves and the farm workers who grow, harvest, ferment, and dry the cacao. Our goal is to honor their hard work by processing the cacao as minimally as possible to reveal the flavors inherent in the beans.
Raaka specializes in unroasted chocolate with creative seasonal inclusion flavors. "We simply love the bold, bright, and fruitier flavor of unroasted cacao beans. We couldn’t find these flavors in other chocolate since most of what is available is made with roasted cacao beans, so we decided to make our own."
The Breeze is proud to offer bean-to-bar chocolate made right here in Louisville, KY! "We create craft chocolate from the finest cacao, that is always ethically and sustainably sourced. While creating dairy free alternatives to traditional favorites, Whelpdale Chocolates is committed to not compromising in quality. We use organic cocoa beans, and pure organic non GMO soy products. Directly trading with cacao farmers means that a true fair price is given for their labor. While we currently don't have any certifications, such as 'fair trade' etc, we can offer full details about who and where we get our cacao, and how much we pay."
